For 9th Graders – Newly Graduated High School Seniors

Are you looking not to starve when you go off to college? Do you wish to amaze your family with your culinary chops? Core topics will include the basic cooking techniques (baking, frying, sautéing, browning, blanching, etc.) and will be manifested in simple, delicious dishes. Possible dishes (all from scratch) include pancakes, eggs in their many forms, chicken teriyaki, hand-breaded chicken tenders, chicken cordon bleu, brownies and muffins, hand-tossed pizza dough for pizza, traditional Mexican cuisine (tacos, sopes, enchiladas with salsa verde, salsa), Indian cuisine, and Thai curry. Maximum course size is six students.

One of the greatest joys of learning to cook is to go to a restaurant, discover a dish you love, and then come home and recreate it. You begin to realize that most dishes follow the same fundamental techniques of preparation. It is in mastering those techniques that you become a more experienced cook."
